CUSTARD TEACAKE RECIPE

Thanks to Esther for bringing this cake to the dance last night and providing the recipe today.

CAKE MIXTURE
125 g Butter, 1/3 cup Caster Sugar, 1 Egg, 3/4 cup Self raising Flour, 1/4 cup Custard Powder

CUSTARD
1 1/2 tablespoons Custard Powder, 1/2 tablespoons Caster Sugar, 1 1/3 cup milk, 22g Butter, 3 teaspoons Vanilla Essence

Its a good idea to make the custard first, before making the cake mixture that way it can cool while you are preparing the cake mixture.

To Make the Custard,
Blend custard powder with sugar and milk in saucepan. Stir constantly over the heat until the mixture boils and thickens. Stir in the butter and vanilla. Cover and cool.

To Make the Cake Mixture.
Grease and line a sponge tin. Set the oven to approx 180. Cream the butter and sugar in a small bowl and add the egg. Beat until combined. Stir in sifted flour and custard powder.

Spread half the cake mixture into the prepared pan. Add the custard over the top of the cake mixture. Put small dots of the remaining cake mixture to cover the custard and spread with a warm knife.

Bake in a moderate oven for about 35 mins. Cool in the pan. Leave in the pan till cool or it will break when turning out. When cold dust with icing sugar.

Note.

When preparing the cake mixture I noticed it need milk so add enough just to make the mixture not so stiff. It is quicker to make than you think, just a big recipe.
